    8 sweet, ripe plantain sweet plantain
    3 #(pds) ground beef  80/20 lean
    1 cup parmesan cheese, grated  fresh
    2 cup sofrito
    1 tbsp. salt
    1 tsp.- pepper, ground
    1 tsp. garlic, minced
    1 tsp. cumin
    1 tbsp. oregano ground, dry
    2 tbsp. vegetable Oil
    ½ cup butter, melted

    *Steamed Sweet Plantains*
    1) Cut the sweet plantain in 1inch portions (cut off the ends)
    2) Cook the plantains in the oven or steam them until their texture is
    (Approximately 20 minutes)
    3) Remove the skin
    4) Mash the plantains with butter until you get the consistency of
    “mashed potatoes”

Sweet Plantain Lasagna
Meat Filling for the Plantain Lasagna:

    1) Heat up the oil in a pot
    2) Mix all of the dry ingredients; season the ground beef with the dry
    seasoning mix
    3) Cook the beef in a pot for 3 minutes, stir constantly
    4) Add the sofrito and cook at medium high temperature until the
    meat absorbs all of the water

    1) Grease up a casserole dish with the vegetable oil, make sure all
    the sides are covered
    2) Use the first 1/2 of the plantain mix for the first layer
    3) Add the ground beef on top of the first layer of the plantain mix
    4) Add your second layer of the plantain mix on top of the beef and
    5) Sprinkle the parmesan cheese on the top
    6) Bake in the oven at 345 degrees for 20 minutes
    7) Take out of the oven and let it sit for 5 minutes before serving
